Description

Golden & Crispy Chicken Cutlets with Gooey Cheese combine the crunch of a perfectly breaded exterior with the molten richness of melted cheese inside. Juicy, flavorful, and irresistibly crispy, this dish brings comfort food to a whole new level and is perfect for both weeknight meals and special occasions.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • Salt and freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika (optional)
  • 46 slices mozzarella cheese (or shredded)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs
  • Vegetable or canola oil for frying
  • Optional garnish: fresh parsley, lemon wedges

Instructions

  1. Butterfly and pound the chicken breasts to 1/2-inch thickness. Season with salt, pepper, garlic powder, onion powder, and paprika.
  2. Place mozzarella in the center of each cutlet and fold or layer as preferred. Secure with toothpicks if needed.
  3. Set up three shallow bowls: flour, beaten eggs, and breadcrumbs mixed with Parmesan and herbs.
  4. Dredge each cutlet in flour, dip in egg, then coat in the breadcrumb mixture.
  5. Chill the breaded cutlets in the refrigerator for 15–20 minutes.
  6. Heat oil in a skillet to 350°F (175°C). Fry the cutlets for 3–4 minutes per side until golden brown and cooked through.
  7. Drain on paper towels or a wire rack. Let rest briefly.
  8. Garnish and serve hot with lemon wedges if desired.
