Ingredients
3 cups marinara sauce
9–12 lasagna noodles
2 cups ricotta cheese
1 egg
1 teaspoon Italian seasoning
0.5 teaspoon salt
0.25 teaspoon black pepper
2 cups fresh spinach
2 cups shredded mozzarella cheese
0.5 cup grated Parmesan cheese
1 tablespoon olive oil
1 cup fresh mozzarella slices or block (for ghosts)
2 tablespoons black olives or black sesame seeds (for eyes)
Instructions
1. Preheat your oven to 375°F (190°C). If using traditional lasagna noodles, boil them according to package directions. Drain and lay flat on parchment paper.
2. In a skillet, heat olive oil and sauté the chopped spinach until wilted. Let cool.
3. In a medium bowl, mix ricotta cheese, egg, Parmesan, Italian seasoning, salt, pepper, and cooled spinach until creamy.
4. In a 9×13-inch baking dish, add a layer of marinara sauce, followed by noodles, ricotta mixture, shredded mozzarella, and more sauce. Repeat layers until ingredients are used up, finishing with sauce and shredded mozzarella on top.
5. Cover the dish with foil and bake for 30 minutes. Remove foil and bake for another 10–15 minutes until bubbly and golden.
6. While it bakes, cut mozzarella slices into ghost shapes and use olive pieces or sesame seeds for eyes.
7. Let the lasagna cool for 10 minutes after baking, then place the ghost shapes on top. For a slight melt, return to the warm oven (turned off) for 2–3 minutes.
