Ingredients

300 g sirloin or ribeye steak, cubed

350 g cheese-filled tortellini (refrigerated or frozen)

3 cloves garlic, minced

2 tablespoons butter

1 tablespoon olive oil

1 cup heavy cream

1/2 cup freshly grated parmesan cheese

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

Salt, to taste

Black pepper, to taste

1 tablespoon chopped fresh parsley or chives (for garnish)


Instructions

1. Take the steak out of the fridge 20–30 minutes early to bring to room temperature. Pat dry and season with salt, pepper, and Italian seasoning.

2. Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon butter. Sear steak cubes for 2–3 minutes per side until browned. Remove and set aside.

3. Cook tortellini according to package directions. Drain and reserve 1/3 cup of pasta water.

4. In the same skillet, lower heat to medium. Add 1 tablespoon butter and garlic. Sauté for 30–60 seconds until fragrant.

5. Stir in heavy cream, parmesan, Italian seasoning, and red pepper flakes. Simmer for 3–5 minutes until slightly thickened.

6. Add cooked tortellini to the sauce and toss to coat. Use reserved pasta water if needed to loosen sauce.

7. Return steak to the skillet and mix gently or serve over the pasta.

8. Garnish with parsley or chives and extra parmesan. Serve immediately.

Notes

Letting the steak rest before and after cooking ensures it stays juicy and flavorful.

Reserve pasta water — it’s perfect for adjusting sauce texture without diluting flavor.

Freshly grated cheese melts much better than pre-shredded and adds more flavor to the sauce.
