Ingredients
1.5 lbs chicken breast or thighs, cut into bite-sized pieces
1 bunch broccolini, trimmed
4 garlic cloves, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1/3 cup sun-dried tomatoes, chopped
2 teaspoons Cajun seasoning
2 tablespoons olive oil
2 tablespoons unsalted butter
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh chopped parsley
Instructions
1. Cut the chicken into even bite-sized pieces and prep all remaining ingredients.
2. Toss broccolini with olive oil, salt, and pepper. Sear over medium-high heat until charred and tender-crisp. Set aside.
3. In the same skillet, add olive oil and butter. Season the chicken with salt, pepper, and Cajun seasoning.
4. Sear chicken in batches, cooking until golden and fully cooked. Remove and set aside.
