Ingredients

  • 2 large chicken breasts, cut into bite-sized chunks
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 cup grated parmesan cheese (for coating)
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons olive oil (for frying)
  • 8 oz rotini pasta
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese (for sauce)
  • Optional: chopped parsley for garnish

Instructions

  1. Season chicken pieces with salt, pepper, paprika, and garlic powder.
  2. In a bowl, combine parmesan cheese and panko breadcrumbs.
  3. Coat the chicken bites in the breadcrumb mixture, pressing to adhere.
  4. Heat olive oil in a skillet and fry chicken in batches until golden and cooked through (about 3–4 minutes per side). Set aside.
  5. Cook rotini pasta in salted boiling water until al dente. Drain and set aside.
  6. In the skillet, melt butter and sauté minced garlic until fragrant (about 30 seconds).
  7. Add heavy cream and bring to a gentle simmer.
  8. Stir in parmesan cheese and whisk until melted and smooth. Season to taste.
  9. Add the cooked rotini to the sauce and toss to coat evenly.
  10. Plate the pasta and top with crispy chicken bites. Garnish with parsley if desired.
