Ingredients
- 2 large chicken breasts, cut into bite-sized chunks
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 cup grated parmesan cheese (for coating)
- 1/2 cup panko breadcrumbs
- 2 tablespoons olive oil (for frying)
- 8 oz rotini pasta
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese (for sauce)
- Optional: chopped parsley for garnish
Instructions
- Season chicken pieces with salt, pepper, paprika, and garlic powder.
- In a bowl, combine parmesan cheese and panko breadcrumbs.
- Coat the chicken bites in the breadcrumb mixture, pressing to adhere.
- Heat olive oil in a skillet and fry chicken in batches until golden and cooked through (about 3–4 minutes per side). Set aside.
- Cook rotini pasta in salted boiling water until al dente. Drain and set aside.
- In the skillet, melt butter and sauté minced garlic until fragrant (about 30 seconds).
- Add heavy cream and bring to a gentle simmer.
- Stir in parmesan cheese and whisk until melted and smooth. Season to taste.
- Add the cooked rotini to the sauce and toss to coat evenly.
- Plate the pasta and top with crispy chicken bites. Garnish with parsley if desired.
