Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1.5 lbs baby yellow potatoes, halved
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1.5 tsp salt
- 1 tsp black pepper
- 1.5 tsp dried Italian seasoning
- 3/4 cup freshly grated Parmesan cheese
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C). Line and lightly grease a large baking sheet.
- In a bowl, toss chicken thighs with 1.5 tbsp olive oil, minced garlic, 0.75 tsp salt, 0.5 tsp pepper, and 0.75 tsp Italian seasoning.
- In another bowl, toss potatoes with remaining olive oil, salt, pepper, and Italian seasoning.
- Arrange chicken in the center of the baking sheet and potatoes around the edges.
- Roast for 25–30 minutes.
- Sprinkle Parmesan over chicken and potatoes.
- Return to oven and roast another 10–15 minutes, until cheese is golden and chicken is cooked through.
- Remove from oven, rest 5 minutes, sprinkle with parsley, and serve.
