Ingredients

1 ½ pounds boneless skinless chicken thighs

1 pound baby gold potatoes, halved

2 tablespoons olive oil

2 tablespoons butter

4 garlic cloves, minced

⅓ cup chicken broth

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped fresh parsley (for garnish)


Instructions

1. Season chicken thighs with salt, pepper, and Italian seasoning on both sides.

2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.

3. In the same skillet, add more oil or butter if needed. Place potatoes cut side down. Cook undisturbed for 4–5 minutes, then stir and cook another 5 minutes.

4. Push potatoes aside and melt butter in the pan. Stir in minced garlic and cook for 30 seconds.

5. Pour in chicken broth and scrape up brown bits from the skillet. Simmer for 2–3 minutes.

6. Return seared chicken to the skillet, nestling it among the potatoes. Spoon a little broth over the top.

7. Sprinkle mozzarella and Parmesan over everything.

8. Transfer skillet to oven and broil on high for 2–3 minutes until cheese is bubbly and golden.

9. Remove from oven, let rest for 2 minutes, garnish with parsley, and serve hot.

Notes

Let the skillet rest a few minutes before serving to lock in juices and allow the cheese to settle.
