Ingredients

2 large chicken breasts, boneless and skinless

1.5 pounds baby potatoes, halved

4 cloves garlic, minced

3 tablespoons olive oil

1 cup grated Parmesan cheese

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

1 teaspoon salt

0.5 teaspoon black pepper

2 tablespoons chopped fresh parsley, for garnish


Instructions

1. Preheat oven to 400°F (200°C).

2. Cut chicken into bite-sized pieces and halve the baby potatoes.

3. In two separate bowls, toss chicken and potatoes with olive oil, garlic, paprika, Italian seasoning, salt, and pepper.

4. Heat an oven-safe skillet over medium-high heat. Sear the chicken pieces for 2–3 minutes per side until lightly browned, then remove and set aside.

5. In the same pan, place potatoes cut-side down and cook undisturbed for 5–6 minutes, then stir and cook another 5 minutes until they begin to soften.

6. Return chicken to the pan and sprinkle the Parmesan evenly over everything.

7. Transfer skillet to the oven and bake for 15–18 minutes, or until chicken is cooked through and potatoes are fork-tender.

8. Garnish with chopped parsley and serve hot.

Notes

Pat the chicken dry before searing to get a golden crust.
