Ingredients
- 1 lb boneless, skinless chicken breast, thinly sliced
- 2 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon honey (or brown sugar)
- 1 teaspoon cornstarch
- 2 tablespoons olive oil (or sesame oil)
- 3 cups cooked white rice
- Optional: chopped green onions or parsley for garnish
Instructions
- Slice chicken breast into thin strips.
- Chop broccoli into florets and slice red bell pepper.
- In a small bowl, whisk together soy sauce, honey, garlic, and cornstarch. Set aside.
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
- Add chicken and stir fry for 4–5 minutes until cooked through. Remove and set aside.
- Add remaining oil and stir fry broccoli and bell pepper for 3–4 minutes until crisp-tender.
- Return chicken to the pan. Pour in the sauce and stir to coat.
- Cook for another 1–2 minutes until sauce thickens.
- Serve hot over rice and garnish as desired.
