Ingredients

For the Chicken & Noodles
  • Chicken Breast or Thighs: 1 lb, cut into bite-sized pieces
  • Lo Mein Noodles: 8 oz, cooked and rinsed
  • Vegetable Oil: 2 tablespoons
For the Vegetables
  • Carrots: 1 medium, julienned
  • Bell Pepper: 1, sliced thinly
  • Green Onions: 1/2 cup, chopped (white and green parts separated)
  • Spinach or Bok Choy (Optional): 1 cup
For the Garlic Sauce
  • Soy Sauce: 1/4 cup
  • Oyster Sauce: 2 tablespoons
  • Sesame Oil: 1 tablespoon
  • Brown Sugar or Honey: 1 tablespoon
  • Fresh Garlic: 4 cloves, minced
  • Ginger: 1 tablespoon, minced or grated
  • Red Pepper Flakes (Optional): 1/2 teaspoon
  • Cornstarch: 1 tablespoon mixed with 2 tablespoons of water
For Garnish
  • Sesame Seeds: 1 tablespoon
  • Green Onions: Extra chopped green parts

Instructions

  1. Prepare Chicken and Noodles: Marinate chicken with soy sauce, garlic, and ginger for 15 minutes. Cook noodles according to package instructions, drain, rinse under cold water, and set aside.
  2. Cook the Chicken: Heat oil in a wok or skillet over medium-high heat. Add chicken and stir-fry for 4-5 minutes until cooked through. Remove and set aside.
  3. Stir-Fry Vegetables: Add more oil to the wok and stir-fry carrots, bell pepper, and white parts of green onions for 2-3 minutes. Add spinach or bok choy if using and cook for an additional minute.
  4. Prepare Sauce: In a bowl, mix soy sauce, oyster sauce, sesame oil, sugar, garlic, ginger, and red pepper flakes. Add cornstarch slurry and stir well.
  5. Combine Everything: Return chicken and noodles to the wok, pour the sauce over, and toss well. Stir-fry for 2-3 minutes until heated through and sauce thickens.
  6. Garnish and Serve: Sprinkle with sesame seeds and green onions. Serve hot.
