Ingredients
For the Lo Mein:
- 8 oz lo mein noodles (or spaghetti)
- 1 lb chicken breast, thinly sliced
- 1 tbsp vegetable oil
- 2 cups mixed vegetables (carrots, bell peppers, broccoli, etc.)
- 1 cup bean sprouts (optional)
- 3 green onions, chopped
For the Garlic Sauce:
- 4 cloves garlic, minced
- 1/4 cup low sodium soy sauce
- 2 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tbsp brown sugar
- 1 tbsp sesame oil
- 1/4 cup chicken broth (or water)
- 1 tsp cornstarch (optional)
- 1/2 tsp ground black pepper
Instructions
- Cook the noodles according to package instructions until al dente. Drain, rinse with cold water, and toss with a splash of sesame oil. Set aside.
- Prepare the sauce by whisking together soy sauce, oyster sauce, hoisin, sugar, sesame oil, broth, garlic, cornstarch (optional), and pepper. Set aside.
- Sauté the chicken in a wok or large skillet with 1 tbsp oil over medium-high heat until golden and cooked through (about 4–5 minutes). Remove from pan.
- Stir-fry vegetables in the same pan until crisp-tender. Add bean sprouts and green onions in the last minute.
- Combine chicken and sauce with the veggies in the pan. Stir and simmer for 1 minute.
- Add the noodles, toss well to coat everything evenly with the sauce.
- Serve hot, garnished with more green onions or sesame seeds if desired.
