Ingredients

For the Lo Mein:

  • 8 oz lo mein noodles (or spaghetti)
  • 1 lb chicken breast, thinly sliced
  • 1 tbsp vegetable oil
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli, etc.)
  • 1 cup bean sprouts (optional)
  • 3 green onions, chopped

For the Garlic Sauce:

  • 4 cloves garlic, minced
  • 1/4 cup low sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1/4 cup chicken broth (or water)
  • 1 tsp cornstarch (optional)
  • 1/2 tsp ground black pepper

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain, rinse with cold water, and toss with a splash of sesame oil. Set aside.
  2. Prepare the sauce by whisking together soy sauce, oyster sauce, hoisin, sugar, sesame oil, broth, garlic, cornstarch (optional), and pepper. Set aside.
  3. Sauté the chicken in a wok or large skillet with 1 tbsp oil over medium-high heat until golden and cooked through (about 4–5 minutes). Remove from pan.
  4. Stir-fry vegetables in the same pan until crisp-tender. Add bean sprouts and green onions in the last minute.
  5. Combine chicken and sauce with the veggies in the pan. Stir and simmer for 1 minute.
  6. Add the noodles, toss well to coat everything evenly with the sauce.
  7. Serve hot, garnished with more green onions or sesame seeds if desired.
