Ingredients
500g sirloin steak, cut into bite-sized cubes
1 teaspoon salt
1 teaspoon cracked black pepper
4 tablespoons butter, divided
1 tablespoon olive oil
4 cloves garlic, minced
300g cheese-filled tortellini
1 cup heavy cream
¾ cup freshly grated parmesan cheese
1 tablespoon chopped fresh parsley
¼ teaspoon crushed red pepper flakes (optional)
Instructions
1. Cut the steak into even bite-sized cubes and pat dry with paper towels. Season with salt and black pepper.
2. Heat a skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. Once hot, sear the steak in batches, 2–3 minutes per side until browned. Set aside.
3. In the same pan, reduce heat to medium. Add remaining butter and minced garlic. Sauté for 30 seconds until fragrant.
4. Return the cooked steak to the skillet and toss to coat in garlic butter. Sprinkle with chopped parsley and set aside.
5. In a separate pot, boil the tortellini according to package instructions. Reserve ¼ cup pasta water before draining.
6. In the same pot, heat heavy cream over medium-low. Stir in grated parmesan and minced garlic. Whisk until smooth and thickened, about 4–5 minutes. Thin with pasta water if needed.
7. Toss the drained tortellini into the sauce until fully coated.
