A luxurious seafood twist on a beloved classic, Garlic Butter Shrimp Scampi Lasagna layers tender shrimp, creamy garlic sauce, and melty cheese between sheets of pasta. It’s the perfect balance of elegance and comfort.
Ingredients
- 12 lasagna noodles
- 1 1/2 pounds large shrimp, peeled and deveined
- 6 cloves garlic, minced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup dry white wine
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 1/2 cups ricotta cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles in salted water until al dente. Drain and set aside.
- In a large skillet, heat olive oil and 2 tablespoons of butter. Add garlic and cook until fragrant.
- Add shrimp, season with salt and pepper, and cook until pink, about 2–3 minutes per side.
- Pour in white wine and simmer for 1–2 minutes. Remove shrimp and set aside, reserving the garlic butter sauce.
- Add remaining butter and cream to the skillet with the reserved sauce. Simmer until thickened slightly.
- Stir in Parmesan cheese and parsley. Adjust seasoning as needed.
- Assemble the lasagna: spread sauce on the bottom of a 9×13 baking dish, add a layer of noodles, dollops of ricotta, shrimp, mozzarella, and more sauce. Repeat layers.
- Finish with a top layer of noodles, sauce, and mozzarella.
- Cover with foil and bake for 25 minutes. Uncover and bake an additional 15–20 minutes until golden and bubbling.
- Let rest 10–15 minutes before serving.
