Garlic Butter Shrimp Scampi Lasagna

Description

A luxurious seafood twist on a beloved classic, Garlic Butter Shrimp Scampi Lasagna layers tender shrimp, creamy garlic sauce, and melty cheese between sheets of pasta. It’s the perfect balance of elegance and comfort.


Ingredients

  • 12 lasagna noodles
  • 1 1/2 pounds large shrimp, peeled and deveined
  • 6 cloves garlic, minced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup dry white wine
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 1/2 cups ricotta cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles in salted water until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil and 2 tablespoons of butter. Add garlic and cook until fragrant.
  4. Add shrimp, season with salt and pepper, and cook until pink, about 2–3 minutes per side.
  5. Pour in white wine and simmer for 1–2 minutes. Remove shrimp and set aside, reserving the garlic butter sauce.
  6. Add remaining butter and cream to the skillet with the reserved sauce. Simmer until thickened slightly.
  7. Stir in Parmesan cheese and parsley. Adjust seasoning as needed.
  8. Assemble the lasagna: spread sauce on the bottom of a 9×13 baking dish, add a layer of noodles, dollops of ricotta, shrimp, mozzarella, and more sauce. Repeat layers.
  9. Finish with a top layer of noodles, sauce, and mozzarella.
  10. Cover with foil and bake for 25 minutes. Uncover and bake an additional 15–20 minutes until golden and bubbling.
  11. Let rest 10–15 minutes before serving.
