Ingredients

1 lb large shrimp, peeled and deveined

1 cup orzo

3 cloves garlic, minced

3 tbsp butter

1 tbsp olive oil

2 cups chicken broth

1 lemon, juiced and zested

2 tbsp fresh parsley, chopped

1 tsp salt

1/2 tsp black pepper


Instructions

1. Pat the shrimp dry with paper towels. Season with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and sear 1–2 minutes per side until pink. Remove and set aside.

3. Lower heat to medium. Melt butter in the same skillet, then add minced garlic and sauté for 30 seconds.

4. Stir in orzo and toast for 1–2 minutes until lightly golden.

5. Add chicken broth and bring to a simmer. Cook 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.

6. Return shrimp to the skillet. Add lemon juice and zest. Cook for 1–2 minutes to heat through.

7. Turn off heat. Stir in chopped parsley. Serve warm with optional lemon wedges.

Notes

For extra flavor, toast the orzo before adding broth.
