Ingredients

  • 1 lb pretzel dough (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • 2430 slices pepperoni (about 34 per pretzel)
  • 3 tablespoons melted butter
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 tablespoon chopped fresh parsley or 1 tsp Italian seasoning
  • 2 tablespoons grated parmesan (optional)
  • 1 tablespoon coarse salt
  • Marinara or pizza sauce for dipping (optional)
  • 1/3 cup baking soda
  • 4 cups hot water (for pretzel bath)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Divide pretzel dough into 6 to 8 equal pieces. Roll each into a long rope and shape into a pretzel.
  3. In a bowl, dissolve baking soda in hot water. Dip each pretzel in the bath and place on the prepared baking sheet.
  4. Brush each pretzel with garlic butter (melted butter mixed with garlic).
  5. Sprinkle mozzarella over each pretzel, then add pepperoni slices. Add parmesan and herbs if using.
  6. Sprinkle pretzels with coarse salt.
  7. Bake for 12–15 minutes, until golden brown and cheese is bubbly.
  8. Remove from oven and brush again with garlic butter. Garnish with more herbs or cheese if desired.
  9. Serve warm with marinara or pizza sauce for dipping.
