This Garlic Butter Beef and Spinach Tortellini is a rich and satisfying pasta dish packed with juicy beef, tender tortellini, and a buttery garlic sauce. Ready in under 30 minutes, it’s the perfect weeknight dinner that’s both indulgent and easy to make!


Ingredients

  • 12 oz cheese tortellini
  • 1 lb beef (sirloin or ribeye), cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1 cup fresh spinach
  • 1/2 cup diced tomatoes
  • 1/2 cup beef broth
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan (optional)

Instructions

  1. Cook the tortellini according to the package instructions. Drain and set aside.
  2. Sear the beef in a hot skillet with olive oil, seasoning with salt, pepper, and Italian seasoning. Cook until browned, then remove from the skillet.
  3. Sauté the garlic and tomatoes in butter for about 1 minute until fragrant.
  4. Make the sauce by adding beef broth and simmering for 2 minutes. Stir in more butter for a rich, silky texture.
  5. Add the spinach and beef back into the skillet, cooking until the spinach wilts.
  6. Combine with tortellini and toss everything together until well coated in the sauce.
  7. Serve warm, garnished with grated Parmesan if desired. Enjoy!
