Ingredients
- 12 oz cheese tortellini
- 1 lb beef (sirloin or ribeye), cut into bite-sized pieces
- 4 cloves garlic, minced
- 3 tbsp butter
- 1 tbsp olive oil
- 1 cup fresh spinach
- 1/2 cup diced tomatoes
- 1/2 cup beef broth
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup grated Parmesan (optional)
Instructions
- Cook the tortellini according to the package instructions. Drain and set aside.
- Sear the beef in a hot skillet with olive oil, seasoning with salt, pepper, and Italian seasoning. Cook until browned, then remove from the skillet.
- Sauté the garlic and tomatoes in butter for about 1 minute until fragrant.
- Make the sauce by adding beef broth and simmering for 2 minutes. Stir in more butter for a rich, silky texture.
- Add the spinach and beef back into the skillet, cooking until the spinach wilts.
- Combine with tortellini and toss everything together until well coated in the sauce.
- Serve warm, garnished with grated Parmesan if desired. Enjoy!
