Crunchy, savory, and naturally gluten-free, these garlic and herb chickpea flour crackers are the perfect homemade snack. Packed with plant protein and fiber, they pair beautifully with dips, spreads, or just on their own. Quick to make, endlessly customizable, and full of flavor – a great addition to your snack lineup!

Ingredients

  • 1 cup chickpea flour
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried rosemary (or herb of choice)
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 34 tablespoons water (as needed)
  • Optional: sesame seeds, red pepper flakes, nutritional yeast

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the chickpea flour, garlic powder, dried herbs, and salt.
  3. Add the olive oil and 3 tablespoons of water. Mix until a soft dough forms. Add more water if needed, a teaspoon at a time.
  4. Place the dough between two sheets of parchment paper and roll out to about 1/8-inch thickness.
  5. Cut the dough into desired cracker shapes using a knife or cookie cutter.
  6. Transfer the parchment with the cut crackers onto the baking sheet.
  7. Optionally, brush the tops with a bit more olive oil and sprinkle with extra herbs or salt.
  8. Bake for 15-20 minutes, or until the crackers are golden and crisp around the edges.
  9. Let cool completely before storing in an airtight container.
