Ingredients

170g unsalted butter

170g dark chocolate (70% cocoa or higher)

150g granulated sugar

100g brown sugar

3 large eggs

2 tsp vanilla extract

90g all-purpose flour

30g unsweetened cocoa powder

1/2 tsp salt

180g cherries (soaked in kirsch or cherry liqueur)

2 tbsp kirsch or cherry liqueur

100g chocolate chunks or chips


Instructions

1. Soak the cherries in kirsch or cherry liqueur for at least 30 minutes or overnight.

2. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.

3. Melt butter and dark chocolate together until smooth. Let cool slightly.

4. In a large bowl, whisk granulated sugar, brown sugar, and eggs until pale and thick.

5. Stir in melted chocolate mixture and vanilla extract.

6. Sift in flour, cocoa powder, and salt. Fold gently until just combined.

7. Fold in drained cherries and chocolate chunks.

8. Pour batter into prepared pan and smooth the top.

9. Bake for 30–35 minutes or until a toothpick comes out with moist crumbs.

10. Let cool completely before slicing.

Notes

For stronger cherry flavor, soak cherries overnight.

Don’t overbake—the center should still be fudgy when tested.
