1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1/2 cup sour cream
1/2 cup peach puree
1 teaspoon vanilla extract
1/2 cup unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
1–2 teaspoons peach juice or milk
Instructions
1. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
2. In a large bowl, cream butter with both sugars until light and fluffy.
3. Beat in the egg, then mix in sour cream, peach puree, and vanilla.

6. Scoop batter with a medium cookie scoop and place mounds on the sheet, 2 inches apart.
7. Bake for 10–12 minutes or until edges are set and tops spring back.
8. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
9. For the filling, beat butter and cream cheese until smooth.
10. Add powdered sugar gradually, followed by vanilla and peach juice or milk to reach desired consistency.

12. Press second cookie on top to sandwich, then chill for 30 minutes before serving.
Notes
For extra flavor, try adding a bit of lemon zest to the filling.
Use parchment paper to prevent sticking and promote even baking.
Chilling the assembled pies helps the filling set perfectly.
