Ingredients

1 ½ cups all-purpose flour

¾ cup warm water

1 ½ teaspoons active dry yeast

2 tablespoons olive oil

½ teaspoon salt

1 teaspoon sugar

1 tablespoon fresh rosemary, chopped

½ teaspoon sea salt flakes (for topping)

½ teaspoon dried herbs (optional, like oregano or thyme)


Instructions

1. In a large bowl, combine warm water, sugar, and yeast. Let sit 5–8 minutes until foamy.

2. Add olive oil, salt, and flour. Mix until a sticky dough forms, then knead 3–5 minutes until smooth.

3. Cover and let rise for 1 hour, or until doubled in size.

4. Line or grease a muffin tin.

5. Punch down dough and divide into muffin cups, filling each ¾ full. Let rise another 25–30 minutes.

6. Preheat oven to 400°F (200°C).

7. Drizzle muffin tops with olive oil, rosemary, sea salt, and optional herbs.

8. Bake for 18–20 minutes until golden brown.

9. Cool in pan 5 minutes, then transfer to a rack. Serve warm or at room temp.

10. Store in an airtight container or freeze for later.

Notes

Make sure your water isn’t too hot or it will kill the yeast. Warm to the touch is perfect.

Don’t skip the second rise; it gives the muffins their signature fluffy texture.

Fresh rosemary adds the best flavor, but dried herbs work if needed.
