Ingredients

1 cup all-purpose flour

1 cup whole milk (room temperature)

3 large eggs (room temperature)

2 tablespoons melted butter

1/2 teaspoon salt

1/2 teaspoon vanilla extract or 1 teaspoon chopped fresh herbs (optional)


Instructions

1. Preheat your oven to 450°F (232°C). Place your popover pan or muffin tin inside to heat up.

2. In a blender or mixing bowl, combine eggs, milk, melted butter, flour, and salt. Blend until completely smooth. Let the batter rest for 10–15 minutes.

3. Carefully remove the hot pan from the oven and grease each cup with butter or non-stick spray.

4. Fill each cup halfway with the batter. Work quickly to maintain pan heat.

5. Bake for 15 minutes at 450°F, then reduce heat to 350°F (177°C) and bake another 15–20 minutes until golden brown. Do not open the oven door.

6. Remove from oven and poke a small hole in each popover to release steam. Serve warm.

Notes

Let the batter rest for at least 10–15 minutes before baking—it makes a huge difference in texture.

Do not open the oven during baking, or the popovers will collapse.

Pierce each popover immediately after baking to release steam and avoid sogginess.
