2 boneless skinless chicken breasts

2 tablespoons olive oil

4 garlic cloves minced

1 tablespoon Cajun seasoning

1 cup heavy cream

1 cup Parmesan cheese grated

8 ounces fettuccine pasta

1/2 cup sun-dried tomatoes chopped

2 cups fresh spinach

2 tablespoons butter

1 teaspoon fresh rosemary chopped

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Cut chicken into bite-sized pieces, pat dry, and season with Cajun seasoning, salt, pepper, and minced garlic.

2. Heat olive oil in a skillet over medium-high heat, sear chicken for 3–4 minutes per side until golden and cooked through. Remove and set aside.

3. Cook fettuccine in a separate pot until al dente, reserving 1 cup pasta water before draining.

4. In the same skillet, melt butter and sauté garlic for 30 seconds. Add heavy cream and bring to a gentle simmer.

5. Stir in Parmesan cheese until sauce thickens.

6. Add spinach and sun-dried tomatoes to the sauce, letting spinach wilt. Adjust seasoning as needed.

7. Toss pasta into the sauce, adding reserved pasta water if needed to loosen it.

8. Return chicken to the skillet and mix gently to coat everything in sauce.

9. Garnish with rosemary, extra Parmesan, and serve immediately.

Patting the chicken dry before searing ensures the best golden crust.

Freshly grated Parmesan melts better and gives a creamier sauce.

Always reserve some pasta water to adjust the sauce consistency if needed.
