Ingredients
For the Chicken:
- 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tablespoons cornstarch
- Salt and black pepper, to taste
- 2 tablespoons vegetable oil
For the Sauce:
- 1/3 cup Thai sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar or white vinegar
- 1 tablespoon honey or brown sugar (optional)
- 1 teaspoon garlic, minced
- 1 teaspoon fresh ginger, grated (optional)
- 1/2 teaspoon red chili flakes (optional)
For Garnish:
- Sesame seeds, toasted
- Chopped green onions
- Steamed jasmine rice or grain of choice, for serving
Instructions
- Pat chicken dry and cut into bite-sized pieces. Season with salt and pepper, then toss with cornstarch until coated.
- Heat oil in a non-stick skillet or wok over medium-high heat. Sear chicken in batches until golden brown and cooked through. Set aside.
- In a small bowl, mix together sweet chili sauce, soy sauce, vinegar, honey, garlic, ginger, and chili flakes.
- Reduce heat to medium-low. Add sauce mixture to the pan and simmer for 2-3 minutes, stirring often.
- Return chicken to the pan and toss to coat evenly in the sauce. Cook for another 2-3 minutes.
- Turn off heat. Garnish with sesame seeds and green onions. Serve over steamed rice.
