Succulent pieces of golden-seared chicken coated in a sticky, glossy sweet chili glaze—this Easy Sweet Chili Chicken is bold in flavor, easy to prepare, and perfect for a quick weeknight dinner or a flavorful meal prep option.


Ingredients

For the Chicken:

  • 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons cornstarch
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil

For the Sauce:

  • 1/3 cup Thai sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar or white vinegar
  • 1 tablespoon honey or brown sugar (optional)
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • 1/2 teaspoon red chili flakes (optional)

For Garnish:

  • Sesame seeds, toasted
  • Chopped green onions
  • Steamed jasmine rice or grain of choice, for serving

Instructions

  1. Pat chicken dry and cut into bite-sized pieces. Season with salt and pepper, then toss with cornstarch until coated.
  2. Heat oil in a non-stick skillet or wok over medium-high heat. Sear chicken in batches until golden brown and cooked through. Set aside.
  3. In a small bowl, mix together sweet chili sauce, soy sauce, vinegar, honey, garlic, ginger, and chili flakes.
  4. Reduce heat to medium-low. Add sauce mixture to the pan and simmer for 2-3 minutes, stirring often.
  5. Return chicken to the pan and toss to coat evenly in the sauce. Cook for another 2-3 minutes.
  6. Turn off heat. Garnish with sesame seeds and green onions. Serve over steamed rice.
