Ingredients
500 g boneless skinless chicken thighs
120 ml sweet chili sauce
30 ml soy sauce
2 cloves garlic minced
30 ml lime juice
15 g fresh cilantro chopped
600 g cooked white rice
60 ml creamy peanut or sesame sauce
15 ml cooking oil
Instructions
1. In a bowl, combine sweet chili sauce, soy sauce, minced garlic, and lime juice. Add chicken thighs and coat well. Marinate for at least 20 minutes or up to 2 hours.
2. Heat a skillet or grill pan over medium-high heat with cooking oil. Cook chicken thighs for 4–5 minutes per side until charred and cooked through.
3. Transfer chicken to a cutting board, rest for 5 minutes, then slice into strips.
4. Assemble bowls with cooked rice, sliced chicken, peanut or sesame sauce drizzle, and cilantro. Add lime wedges if desired.

Notes
