Description

Easy Summer Bruschetta Pasta is a quick, refreshing dish that brings all the flavors of classic Italian bruschetta into a light pasta salad. Juicy tomatoes, garlic, basil, and creamy feta are tossed with al dente rotini and finished with a generous drizzle of olive oil. Perfect for picnics, barbecues, or no-fuss dinners.


Ingredients

  • 12 oz rotini pasta
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil (plus more for finishing)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper to taste
  • Optional: red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil. Cook rotini according to package directions until al dente. Drain and rinse with cold water. Set aside.
  2. In a large mixing bowl, combine halved cherry tomatoes, minced garlic, a pinch of salt, black pepper, and olive oil. Let marinate for 10–15 minutes.
  3. Add cooled pasta to the tomato mixture and toss gently to coat.
  4. Crumble feta cheese into the bowl and add chopped fresh basil. Toss lightly to combine.
  5. Taste and adjust seasoning with more salt, pepper, or red pepper flakes.
  6. Serve immediately at room temperature or chill for 30 minutes before serving.
