Ingredients
- 12 oz rotini pasta
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/4 cup extra virgin olive oil (plus more for finishing)
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh basil, chopped
- Salt and black pepper to taste
- Optional: red pepper flakes
Instructions
- Bring a large pot of salted water to a boil. Cook rotini according to package directions until al dente. Drain and rinse with cold water. Set aside.
- In a large mixing bowl, combine halved cherry tomatoes, minced garlic, a pinch of salt, black pepper, and olive oil. Let marinate for 10–15 minutes.
- Add cooled pasta to the tomato mixture and toss gently to coat.
- Crumble feta cheese into the bowl and add chopped fresh basil. Toss lightly to combine.
- Taste and adjust seasoning with more salt, pepper, or red pepper flakes.
- Serve immediately at room temperature or chill for 30 minutes before serving.
