Ingredients

6 large eggs

1 cup cottage cheese

1 cup shredded cheddar or mozzarella cheese

1 cup fresh spinach (or 1/2 cup frozen, thawed and drained)

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder (optional)

1/4 cup chopped onions (optional)

Instructions

1. Preheat the oven to 375°F (190°C) and lightly grease an 8×8 or 9-inch round baking dish.

2. Sauté spinach in a pan over medium heat until wilted (if using fresh). If using frozen, thaw and squeeze out water.

3. In a large bowl, whisk together the eggs, cottage cheese, shredded cheese, milk, salt, pepper, and garlic powder.

4. Fold in cooked spinach and optional onions into the egg mixture.

5. Pour the mixture into the prepared baking dish and spread evenly.

6. Bake for 35–40 minutes or until the top is golden and the center is set.

7. Let the casserole rest for 5–10 minutes before slicing and serving.

Notes

Be sure to drain spinach thoroughly to avoid a watery casserole.

Use full-fat cottage cheese for maximum creaminess.

This dish is freezer-friendly and perfect for meal prep.
