Ingredients

  • 1 lb ground beef
  • 1 (10 oz) can Rotel tomatoes (with green chilies)
  • 1 lb Velveeta cheese, cubed

Optional Add-ins:

  • 1/2 tsp taco seasoning
  • 2 oz cream cheese
  • Diced jalapeños or green chilies, to taste
  • Fresh cilantro or green onions, for garnish

Instructions

  1. In a large skillet over medium heat, brown the ground beef. Break it apart as it cooks and cook until no longer pink (about 6–8 minutes).
  2. Drain any excess fat from the skillet.
  3. Stir in the Rotel tomatoes (with their juice) and simmer for 2–3 minutes.
  4. Add the cubed Velveeta cheese. Reduce heat to low and stir continuously until the cheese is fully melted and combined.
  5. For extra creaminess or flavor, stir in any optional ingredients after the cheese is melted.
