Creamy, spicy, and full of flavor, this Easy Rasta Pasta brings Caribbean vibes to your plate in just 30 minutes. Loaded with jerk shrimp, colorful bell peppers, and a rich Parmesan cream sauce, it’s a bold and comforting dinner you’ll crave again and again.
Ingredients
8 oz casarecce pasta
1 lb large shrimp, peeled and deveined
2 tbsp jerk seasoning
1 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1 tbsp chopped parsley (optional)
Instructions
1. Season shrimp with jerk seasoning and 1/2 tbsp olive oil.
2. In a skillet over medium-high heat, cook shrimp for 1–2 minutes per side until cooked through. Remove and set aside.
3. In the same skillet, add remaining olive oil. Sauté onion and garlic for 1 minute.
4. Add bell peppers and cook until slightly softened, about 4–5 minutes.
5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens.
6. Boil pasta according to package instructions. Drain and reserve 1/4 cup of pasta water.
7. Add cooked pasta to the sauce and toss to coat. Stir in shrimp and warm through.
8. Adjust sauce consistency with reserved pasta water if needed.
9. Season with salt and pepper to taste.
10. Garnish with chopped parsley if using, and serve hot.
