Description

A soft, sweet no-bake candy made from mashed potatoes, powdered sugar, and a swirl of creamy peanut butter. This nostalgic treat is easy to prepare, naturally gluten-free, and perfect for holidays or gifting.


Ingredients

  • 1/2 cup mashed potato (plain, cooled)
  • 4 cups powdered sugar (approximate, added gradually)
  • 1/2 teaspoon vanilla extract
  • 1/3 cup creamy peanut butter

Instructions

  1. Peel, boil, and mash one Russet potato until smooth. Let it cool completely.
  2. Place 1/2 cup of the mashed potato in a large bowl.
  3. Add powdered sugar 1 cup at a time, stirring well between additions until a dough forms.
  4. Mix in the vanilla extract.
  5. Roll the dough between two sheets of parchment paper into a rectangle about 1/4 inch thick.
  6. Spread a thin, even layer of peanut butter over the dough.
  7. Roll the dough tightly into a log using the parchment paper to guide you.
  8. Wrap the log and refrigerate for at least 30 minutes.
  9. Once firm, slice into 1/2-inch rounds.
  10. Store between layers of parchment in an airtight container in the refrigerator.
