Ingredients

1 tablespoon olive oil

1 medium yellow onion, chopped

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

6 cups chicken broth

2 cups cooked shredded chicken

9 ounces cheese tortellini

1 cup frozen peas

1 cup heavy cream

2 cups fresh spinach

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1/4 cup grated Parmesan cheese (optional)

2 tablespoons chopped fresh parsley


Instructions

1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5–7 minutes until vegetables are softened.

2. Pour in chicken broth and bring to a gentle boil. Stir in shredded chicken, salt, pepper, and Italian seasoning. Simmer for 10 minutes.

3. Add cheese tortellini and cook according to package directions, usually 5–7 minutes, until tender.

4. Reduce heat to low. Stir in heavy cream and frozen peas. Let simmer for another 2–3 minutes until heated through.

5. Turn off the heat and stir in fresh spinach until wilted.

6. Serve hot, garnished with Parmesan cheese and chopped parsley.

Notes

Use rotisserie chicken to cut down prep time and add extra flavor.

For a lighter version, substitute the heavy cream with half-and-half.

Don’t overcook the tortellini—add it at the last minute for best texture.
