Ingredients

2 tablespoons unsalted butter

1 tablespoon olive oil

1 medium yellow onion, finely chopped

3 garlic cloves, minced

12 oz cremini or white button mushrooms, thinly sliced

1 tablespoon all-purpose flour

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/4 teaspoon black pepper

Salt to taste

1 tablespoon soy sauce or tamari

1/2 cup heavy cream or plant-based cream

1 1/2 cups vegetable broth

Fresh parsley for garnish


Instructions

1. In a large skillet, melt butter with olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.

2. Add sliced mushrooms and cook for 8–10 minutes until browned and their moisture has evaporated. Stir in minced garlic and cook for 1–2 minutes.

3. Season with thyme, rosemary, black pepper, and salt. Sprinkle flour over the mixture and stir constantly for 1 minute.

4. Gradually pour in the vegetable broth, scraping up any browned bits. Add soy sauce or tamari and bring to a gentle boil. Reduce heat and simmer for 5–7 minutes.

5. Stir in the cream and simmer for an additional 2–3 minutes until thick and creamy.

6. Taste and adjust seasoning if needed. Garnish with parsley and serve hot over your favorite dishes.

Notes

For a vegan version, substitute butter and cream with olive oil and plant-based cream.

For deeper flavor, use a mix of mushrooms like cremini, shiitake, and portobello.

If the gravy thickens too much after storing, add a splash of broth or water when reheating.
