Ingredients

400g linguine

4 tablespoons unsalted butter

3 tablespoons fresh lemon juice

1/2 cup grated Parmesan cheese

1 garlic clove, minced (optional)

Salt, to taste

Cracked black pepper, to taste

1/2 cup reserved pasta water

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil and cook the linguine until al dente. Reserve 1 cup of pasta water before draining.

2. In a large skillet over medium heat, melt the butter. If using garlic, add it now and sauté for about 30 seconds.

3. Stir in the fresh lemon juice and reduce heat to low.

4. Add the cooked linguine to the skillet and toss to coat in the lemon butter sauce. Add a few tablespoons of pasta water to help the sauce emulsify.

5. Sprinkle in the Parmesan and stir until melted and smooth. Adjust consistency with more pasta water if needed.

6. Season with salt and cracked black pepper. Garnish with chopped parsley and extra Parmesan if desired. Serve hot.
