Description
Golden, boat-shaped, and filled with molten cheese and a runny egg center, Khachapuri is a soul-warming Georgian bread. This easy version delivers all the indulgence with minimal effort. Perfect for brunch, dinner, or a savory treat.
Ingredients
1 ½ cups all-purpose flour
½ cup warm water
2 tablespoons plain yogurt
1 tablespoon olive oil
1 teaspoon sugar
½ teaspoon salt
1 teaspoon instant dry yeast
1 cup shredded mozzarella cheese
½ cup crumbled feta cheese
1 egg yolk
1 tablespoon butter
1 egg (for egg wash)
Instructions
1. In a mixing bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes.
2. Add yogurt, olive oil, salt, and flour. Mix until a soft dough forms. Knead for 3–5 minutes.
3. Cover the bowl and let the dough rise in a warm place for 45–60 minutes.
4. Mix mozzarella and feta cheese in a bowl. Set aside.
5. Preheat oven to 450°F (230°C). Line a baking sheet with parchment.
6. Roll dough into an oval, fold the sides, and pinch ends to form a boat.
7. Transfer to the baking sheet. Fill with cheese. Brush crust with egg wash.
8. Bake for 12–14 minutes until crust is golden and cheese bubbles.
9. Remove from oven, make a well in cheese, and add egg yolk. Bake 2–3 more minutes.
10. Optional: Dot with butter. Serve hot and enjoy by tearing off crust and dipping into the cheese.
Notes
Let dough rise properly to ensure a good texture.
Use room temperature cheese for better melting.
Add egg yolk only at the end to avoid overcooking.
