Ingredients
- 1 lb ground beef
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 (14.5 oz) can diced tomatoes, with juices
- 6 cups beef broth
- 2 cups frozen mixed vegetables
- 2 cups egg noodles (uncooked)
- 1 tsp dried Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat if necessary.
- Add the chopped onion, carrots, and celery. Cook for 5–7 minutes until softened.
- Stir in the garlic and cook for an additional 1 minute.
- Add diced tomatoes with their juices, beef broth, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 10–12 minutes.
- Add frozen mixed vegetables and egg noodles.
- Simmer for another 8–10 minutes, or until noodles are tender.
- Taste and adjust seasoning as needed. Garnish with parsley before serving.
