Description

A hearty and comforting soup made with ground beef, vegetables, egg noodles, and a rich broth. Easy Hamburger Noodle Soup is the perfect one-pot meal for cozy dinners or make-ahead lunches.


Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 6 cups beef broth
  • 2 cups frozen mixed vegetables
  • 2 cups egg noodles (uncooked)
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat if necessary.
  2. Add the chopped onion, carrots, and celery. Cook for 5–7 minutes until softened.
  3. Stir in the garlic and cook for an additional 1 minute.
  4. Add diced tomatoes with their juices, beef broth, Italian seasoning, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 10–12 minutes.
  6. Add frozen mixed vegetables and egg noodles.
  7. Simmer for another 8–10 minutes, or until noodles are tender.
  8. Taste and adjust seasoning as needed. Garnish with parsley before serving.
