Ingredients

1.5 pounds boneless skinless chicken thighs or breasts

2 tablespoons olive oil

3 tablespoons butter

4 cloves garlic minced

2 teaspoons Cajun seasoning (or more to taste)

1 teaspoon salt

½ teaspoon black pepper

8 ounces spaghetti

1 cup heavy cream

¾ cup freshly grated parmesan cheese

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Cut chicken into bite-sized pieces and pat dry. Season with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 3–4 minutes per side until golden and cooked through. Remove and set aside.

3. In the same skillet, reduce heat to medium. Add butter and garlic; sauté 1–2 minutes until fragrant. Return chicken and toss in garlic butter.

4. Cook spaghetti in a pot of salted boiling water until al dente. Drain and reserve ½ cup of pasta water.

5. In another pan, heat heavy cream and bring to a simmer. Stir in Cajun seasoning and parmesan cheese. Simmer for 3–5 minutes until slightly thickened.

6. Add cooked pasta to the sauce and toss to coat. Add pasta water as needed to adjust the consistency.

7. Serve pasta in bowls and top with garlic butter chicken bites. Garnish with parsley if desired.
