Ingredients
- 3 to 4 lbs beef brisket (flat cut or point cut)
- 2 large onions, thickly sliced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 1 tbsp brown sugar
- 3–4 sprigs fresh thyme (or 1 tsp dried thyme)
- Salt and black pepper, to taste
- 2 tbsp flour or cornstarch (for thickening gravy)
Instructions
- Season brisket generously with salt and pepper.
- (Optional) Sear brisket in a hot skillet until browned on all sides.
- Place sliced onions and minced garlic in the bottom of the crockpot.
- In a bowl, whisk together beef broth, Worcestershire sauce, tomato paste, and brown sugar.
- Lay brisket over onions and pour the liquid mixture over it. Add thyme.
- Cover and cook on low for 8–10 hours or high for 5–6 hours.
- Transfer brisket to a cutting board and let rest for 10–15 minutes.
- Pour cooking liquid into a saucepan. Whisk in flour or cornstarch slurry.
- Simmer gravy for 5–10 minutes until thickened.
- Slice brisket against the grain and return to gravy before serving.
