Ingredients
2 boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and black pepper to taste
½ teaspoon Italian seasoning (optional)
20 ounces cheese tortellini (refrigerated or frozen)
1½ cups heavy cream
1 cup whole milk
6 ounces Velveeta cheese cubed
1 cup shredded mozzarella
2 tablespoons unsalted butter
4 garlic cloves minced
2 tablespoons chopped fresh parsley
¼ cup grated Parmesan cheese (optional)
Fresh parsley or basil for garnish
Cracked black pepper for garnish
Red pepper flakes (optional)
Instructions
1. Pat chicken dry and slice if needed. Rub with olive oil and season with smoked paprika, garlic powder, onion powder, salt, pepper, and Italian seasoning.
2. Heat a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and let rest.
3. Lower heat to medium. In the same skillet, melt butter and sauté garlic for 30 seconds.
4. Pour in heavy cream and milk, then bring to a gentle simmer.
5. Add cubed Velveeta and stir until melted. Lower heat and add mozzarella and Parmesan. Stir until smooth and creamy.
6. Cook tortellini slightly under package time, then drain and add directly to sauce.
7. Toss tortellini gently in sauce and let simmer for 2–3 minutes to absorb flavor.
8. Slice the chicken and place on top of the tortellini.
9. Garnish with parsley, black pepper, and red pepper flakes if desired.
10. Serve immediately and enjoy!
Notes
Cube the Velveeta for quicker, smoother melting.
Slightly undercook tortellini to keep it firm and flavorful.
Let the chicken rest before slicing to preserve juiciness.
