Perfect for busy weeknights, this spicy, buttery chicken dish comes together in about 30 minutes and pairs perfectly with creamy rotini pasta and crisp celery. It’s one of those easy recipes that hits the spot whether you’re cooking for yourself or a crowd. If you’re looking for food ideas that are big on flavor but short on prep, this healthy snack or easy dinner option is calling your name.

Ingredients

1 lb boneless skinless chicken breasts

1 cup buffalo sauce

3 tablespoons unsalted butter

3 cloves garlic minced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

8 oz rotini pasta

1/2 cup ranch or blue cheese dressing

1 cup celery sticks

1 tablespoon chopped fresh parsley (optional)

Instructions

1. Cut the chicken breasts into bite-sized pieces and pat dry with paper towels. Season with salt and pepper.

2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–8 minutes until golden and cooked through.

3. In a separate pan, melt butter over medium heat. Add minced garlic and cook for 30 seconds, then stir in buffalo sauce and let simmer for 1–2 minutes.

4. Pour the buffalo garlic sauce over the cooked chicken and stir to coat evenly. Let simmer for 2 more minutes on low heat.

5. Meanwhile, boil the rotini pasta in salted water according to package directions. Drain and set aside.

6. Plate the pasta, top with buffalo garlic chicken, add celery sticks, and drizzle with ranch or blue cheese.

7. Garnish with parsley if using and serve immediately.

Notes

Dry the chicken thoroughly before searing for better browning.

Adjust the spice level by increasing or decreasing the amount of buffalo sauce or mixing in a bit of honey.

Serve everything fresh—celery and dressing are best added just before serving to preserve texture.
