Ingredients
2 cups cooked shredded chicken
4 oz cream cheese, softened
1/3 cup buffalo sauce
1/2 cup shredded cheddar cheese
2 tablespoons chopped green onions
1/2 teaspoon garlic powder
Salt and pepper to taste
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
Oil for frying (optional)
Instructions
1. In a bowl, mix together shredded chicken, cream cheese, buffalo sauce, cheddar, green onions, garlic powder, salt, and pepper until fully combined.
2. Scoop heaping tablespoons of the mixture and roll into balls. Place them on a tray and refrigerate for 30 minutes.
3. Set up a dredging station with three bowls: flour, beaten eggs, and panko breadcrumbs.
4. Roll each chilled ball in flour, dip in egg, then coat with breadcrumbs. Press gently so the coating sticks.
5. To fry: heat oil to 350°F and fry in batches for 2–3 minutes until golden. Drain on paper towels.
6. To bake: preheat oven to 400°F, place on greased tray, spray lightly with oil, and bake for 20–25 minutes, flipping halfway.
