Ingredients

1 cup full-fat Greek yogurt

1 cup grated cucumber (about 1 medium cucumber, drained well)

2 cloves garlic, finely minced or grated

1 tablespoon fresh dill, finely chopped

1 tablespoon fresh lemon juice

1 tablespoon extra virgin olive oil (plus more for garnish)

1/2 teaspoon salt (or to taste)

1/4 teaspoon freshly ground black pepper


Instructions

1. Wash and grate the cucumber using a box grater. Place the grated cucumber in a clean kitchen towel and squeeze out as much liquid as possible to prevent a watery sauce.

2. Stir the Greek yogurt in a medium bowl until completely smooth and creamy.

3. Add the drained cucumber, minced garlic, chopped dill, lemon juice, olive oil, salt, and black pepper.

4. Mix thoroughly until evenly combined and smooth.

5. Taste and adjust seasoning if necessary.

6. Cover and refrigerate for at least 30 minutes, preferably 2–4 hours for best flavor.

7. Stir before serving and drizzle with olive oil and fresh dill for garnish.

Always squeeze the cucumber thoroughly to prevent excess moisture.

Use thick full-fat Greek yogurt or strain regular yogurt for best consistency.
