Ingredients

2 pie crusts (top and bottom)

6 to 7 medium Granny Smith apples

1/2 cup granulated sugar

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon lemon juice

2 tablespoons all-purpose flour

2 tablespoons unsalted butter, cut into small pieces

1 egg (for egg wash)


Instructions

1. If making homemade crust, prepare the dough and chill for at least 1 hour. Let store-bought crust sit at room temperature for a few minutes before rolling.

2. Preheat the oven to 425°F (220°C). Roll out the bottom crust and fit it into a 9-inch pie plate.

3. Peel, core, and slice the apples evenly. Toss them with lemon juice, sugars, spices, and flour until well-coated.

4. Fill the bottom crust with the apple mixture, slightly mounding in the center. Dot the filling with small pieces of butter.

5. Roll out the top crust and place over the filling. Use a full cover or create a lattice. Seal and crimp edges. Brush with egg wash and sprinkle with sugar.

6. Place the pie on a baking sheet and bake for 45–55 minutes, until golden brown and bubbling. Cover edges with foil if they brown too quickly.

7. Let the pie cool for at least 2 hours before slicing to allow the filling to set properly.
