This Easy 2-Ingredient Cottage Cheese Flatbread is soft, chewy, and protein-rich. With just flour and cottage cheese, you can make a warm and versatile flatbread perfect for dipping, wrapping, or topping.
Ingredients
1 cup cottage cheese
1 cup all-purpose flour
Instructions
1. In a mixing bowl, combine 1 cup of cottage cheese and 1 cup of all-purpose flour until a dough forms.
2. Lightly flour a surface and knead the dough for 2–3 minutes until it becomes smooth and slightly tacky.
3. Divide the dough into 2–3 pieces and roll each into a ¼ inch thick flatbread shape.
4. Heat a nonstick or cast iron skillet over medium-high heat.
5. Cook each flatbread for 2–3 minutes per side until golden brown spots appear.
6. Optionally brush with olive oil or melted butter and add herbs, garlic, or cheese while warm.
7. Serve immediately or let cool for storage.
8. To reheat, warm in a dry skillet or microwave for 15–20 seconds.
9. To freeze, separate pieces with parchment, seal in a bag, and store up to 2 months.
Notes
Drain excess liquid from cottage cheese to avoid sticky dough.
Use a hot skillet for those perfect golden brown spots.
Store leftovers in the fridge and reheat in a skillet to refresh the texture.
