Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 2 large eggs
- 1 (20-ounce) can crushed pineapple (with juice)
- 1 cup shredded coconut
- 1 teaspoon baking soda
- ½ teaspoon salt
For the Glaze:
- ½ cup butter
- 1 cup brown sugar
- ⅔ cup evaporated milk
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Instructions
- Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Make the Batter: In a large bowl, combine flour, sugar, baking soda, and salt. Stir in crushed pineapple (with juice), eggs, and shredded coconut. Mix until just combined.
- Bake the Cake: Pour the batter into the prepared dish and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the Glaze: While the cake bakes, melt butter in a saucepan over medium heat. Stir in brown sugar and evaporated milk, bringing it to a gentle boil. Simmer for 5 minutes, then remove from heat and stir in vanilla extract and pecans.
- Glaze the Cake: Once the cake is done, use a fork to poke small holes all over. Pour the warm glaze evenly over the hot cake. Let it soak in for at least 10–15 minutes before serving.
- Serve & Enjoy: Enjoy warm or at room temperature. Store leftovers in an airtight container.
