Ingredients

1 cup unsalted butter

1 cup granulated sugar

1/4 teaspoon kosher salt

1 teaspoon vanilla extract

2 tablespoons water (optional)

2 cups white chocolate chips or chopped white chocolate

1/2 cup granulated sugar

2 tablespoons ground cinnamon


Instructions

1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside and measure all ingredients before starting.

2. In a heavy-bottomed saucepan over medium heat, combine butter, sugar, salt, and optional water. Stir constantly until melted and boiling.

3. Continue stirring until the temperature reaches 300°F (hard crack stage). Immediately remove from heat and stir in vanilla extract.

4. Pour hot toffee mixture onto the prepared baking sheet and spread to about 1/4-inch thickness. Let cool completely.

5. Melt white chocolate in the microwave or using a double boiler. Stir until smooth.

6. Once toffee is set and cool, spread the melted white chocolate evenly over the surface.

7. Mix cinnamon and sugar together, then sprinkle generously over the white chocolate before it sets.

8. Let chocolate harden fully, then break toffee into squares or shards. Store in an airtight container.

Notes

Be sure to use a candy thermometer to reach the hard crack stage — it’s key for that perfect crisp texture.
