Ingredients

1.5 pounds chicken breasts, thinly sliced

1 cup dill pickle brine

1/2 cup chopped dill pickles

3/4 cup grated parmesan cheese

1 cup panko breadcrumbs

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 cup ranch dressing (optional)

1 tablespoon chopped fresh dill (optional)


Instructions

1. Place chicken in a shallow dish and cover with dill pickle brine. Marinate in the fridge for 30 minutes to 4 hours.

2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment or foil.

3. Set up two bowls: one with whisked eggs, and one with parmesan, panko, garlic powder, onion powder, salt, and pepper.

4. Remove chicken from brine and pat dry. Dip in egg, then coat in breadcrumb-parmesan mixture, pressing to adhere.

5. Arrange on baking sheet and bake for 20–25 minutes, flipping halfway through.

6. Once done, top with chopped dill pickles, drizzle with ranch, and sprinkle fresh dill. Serve hot and crispy.

Notes

Marinate the chicken for at least 30 minutes to allow the brine to tenderize and flavor it well.
