Ingredients
1.5 lbs boneless skinless chicken thighs or breasts
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce
3 cloves garlic, minced
1 teaspoon ginger, grated or ground
2 tablespoons cornstarch
2 tablespoons cold water
2 tablespoons chopped green onions (optional, for garnish)
1 teaspoon sesame seeds (optional, for garnish)
Instructions
1. Trim excess fat from the chicken and cut into large bite-sized pieces.
2. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic, and ginger.
3. Place the chicken in the crockpot and pour the sauce over it. Stir to coat evenly.
4. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours.
5. Mix cornstarch and water to form a slurry. Add it to the crockpot 30 minutes before serving to thicken the sauce.
