4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon paprika

1/2 cup sun-dried tomatoes, chopped

3 cloves garlic, minced

1 cup heavy cream or half-and-half

1/2 cup chicken broth

3/4 cup freshly grated Parmesan cheese

3 cups fresh spinach, chopped

1 tablespoon cornstarch

1 tablespoon water

Fresh basil or parsley, for garnish


Instructions

1. Pat chicken dry and rub with a mix of salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika.

2. Optional: Sear chicken in a skillet with olive oil for 2–3 minutes per side for extra flavor.

3. In a bowl, whisk together cream, broth, garlic, Parmesan, and chopped sun-dried tomatoes.

4. Place chicken in the slow cooker and pour sauce over the top.

5. Cook on LOW for 4–5 hours or HIGH for 2.5–3 hours until chicken is tender.

6. Stir in fresh spinach 20–30 minutes before serving.

7. Optional: Mix cornstarch and water to make a slurry, then stir into the sauce to thicken.
