Ingredients
For the Pie Crust
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter (cold, cut into cubes)
- 6–8 tablespoons ice water

For the Pecan Filling
- ¾ cup brown sugar
- ½ cup light corn syrup
- ¼ cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon (optional)
- 1 egg (lightly beaten)
- 1 cup pecans (chopped)
For Frying and Finishing
- 4 cups vegetable oil (for frying)
- 1 egg (beaten, for sealing)
- 2 tablespoons granulated sugar (optional)
- Powdered sugar or caramel sauce (for garnish, optional)
Instructions
- Prepare the Dough
- In a large bowl, mix flour and salt. Add cold butter and blend until mixture resembles coarse crumbs.
- Gradually add ice water, mixing until dough forms. Wrap in plastic and refrigerate for 30 minutes.
- Make the Pecan Filling
- In a bowl, whisk together brown sugar, corn syrup, melted butter, vanilla, cinnamon, and egg until smooth.
- Stir in chopped pecans and set aside.
- Roll and Cut the Dough
- Roll out the chilled dough to about ⅛-inch thick.
- Use a round cutter (4 to 5 inches) to cut circles.
- Assemble the Pies
- Place 1 to 1 ½ tablespoons of pecan filling in the center of each dough circle.
- Brush edges with beaten egg, fold over, and press with a fork to seal.
- Heat the Oil
- Heat oil in a deep fryer or heavy-duty pot to 350°F (175°C).
- Fry the Pies
- Fry in batches for about 2-3 minutes per side until golden brown.
