Ingredients

For the Pie Crust

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter (cold, cut into cubes)
  • 68 tablespoons ice water

(Or use store-bought pie dough for convenience.)

For the Pecan Filling

  • ¾ cup brown sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional)
  • 1 egg (lightly beaten)
  • 1 cup pecans (chopped)

For Frying and Finishing

  • 4 cups vegetable oil (for frying)
  • 1 egg (beaten, for sealing)
  • 2 tablespoons granulated sugar (optional)
  • Powdered sugar or caramel sauce (for garnish, optional)

Instructions

  1. Prepare the Dough
    • In a large bowl, mix flour and salt. Add cold butter and blend until mixture resembles coarse crumbs.
    • Gradually add ice water, mixing until dough forms. Wrap in plastic and refrigerate for 30 minutes.
  2. Make the Pecan Filling
    • In a bowl, whisk together brown sugar, corn syrup, melted butter, vanilla, cinnamon, and egg until smooth.
    • Stir in chopped pecans and set aside.
  3. Roll and Cut the Dough
    • Roll out the chilled dough to about ⅛-inch thick.
    • Use a round cutter (4 to 5 inches) to cut circles.
  4. Assemble the Pies
    • Place 1 to 1 ½ tablespoons of pecan filling in the center of each dough circle.
    • Brush edges with beaten egg, fold over, and press with a fork to seal.
  5. Heat the Oil
    • Heat oil in a deep fryer or heavy-duty pot to 350°F (175°C).
  6. Fry the Pies
    • Fry in batches for about 2-3 minutes per side until golden brown.
    • Remove with a slotted spoon and drain on paper towels.
  7. Serve and Enjoy
    • Dust with powdered sugar or drizzle with caramel sauce. Serve warm!
