Ingredients

3 boneless skinless chicken breasts

3 cups cubed butternut squash

1/4 cup maple syrup

2 tablespoons Dijon mustard

3 cloves garlic minced

1/2 cup chicken broth

1 tablespoon olive oil

4 sprigs fresh thyme

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Season the chicken breasts with salt and pepper. Optional: sear in olive oil until golden on both sides.

2. Peel and cube the butternut squash into 1-inch pieces and place them in the bottom of the crockpot.

3. In a bowl, whisk together maple syrup, Dijon mustard, minced garlic, and chicken broth.

4. Place the chicken on top of the squash and pour the maple Dijon sauce over everything.

5. Add fresh thyme sprigs on top for flavor.

6. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is tender and cooked through.

7. Remove thyme sprigs and serve with sauce spooned over the chicken and squash.
