Ingredients

2 large sweet potatoes

2 tablespoons cornstarch

2 large eggs

1 cup breadcrumbs or panko

½ cup freshly grated Parmesan cheese

4 tablespoons unsalted butter

810 fresh sage leaves

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil (or neutral oil for frying)


Instructions

1. Peel the sweet potatoes and cut into 1-inch cubes.

2. Toss the cubes with cornstarch until lightly coated.

3. Beat the eggs in a shallow bowl. In another bowl, combine breadcrumbs with salt and pepper.

4. Dip each cube into the egg, then coat fully in breadcrumbs.

5. Heat oil in a skillet over medium heat. Cook the cubes in batches for 6–8 minutes, turning until all sides are golden. Alternatively, bake at 425°F (220°C) for 25–30 minutes, flipping halfway.

6. While the bites cook, melt butter in a saucepan. Add sage leaves and cook until butter browns and sage is crispy, about 3 minutes.

7. Remove butter from heat and stir in Parmesan.

8. Drizzle the herbed Parmesan butter over the crispy bites and toss to coat.

9. Serve immediately with optional dipping sauces or garnishes.

Notes

Make sure the oil is hot before adding the sweet potatoes — this prevents sogginess.

For a lighter version, use the air fryer at 400°F for 12–15 minutes, shaking halfway.

Brown the butter just until golden and nutty — it can burn fast if left unattended.
